Enriches must in parietal polysaccharides, aroma precursor amino acids, and yeast reducing metabolites such as natural glutathione (about 2.7%), capable of blocking oxidative reactions in a stable manner. It increases the synthesis of volatile thiols by yeasts. During aging it releases mannoproteins and glutathione. Contributes to the volume and increases the antioxidative potential of wines.
