An interspecific hybrid yeast selected in collaboration with the Australian Wine Research Institute (AWRI) for the processing of sparkling, sparkling and premium white wines in which aroma intensification is desired. During first fermentation AWRI Celebrate is characterized by high production of fruity, floral and strawberry aromas, as well as by a pleasant cookie and brioche aroma. Particularly suitable also in frothing.
