AWRI UVAmaX is a non-GMO hybrid active dry yeast strain (S. Cerevisiae x S. Uvarum) selected in collaboration with the Australian Wine Research Institute (AWRI) that has the natural ability to reduce the level of volatile acidity in wine, particularly for red wines from raisined or overripe grapes and wood-aged white wines.
Very low production of volatile acidity (≤0.2 g/L). Good glycerol production in important wines intended for very long aging. Has a good Killer factor so it dominates fermentation.
