Strain particularly suitable for the processing of fine and structured red wines such as Syrah, Cabernet Sauvignon, Negroamaro, Montepulciano. Promotes extraction of compounds from skins, thanks to specific enzymatic activities, together with low adsorption of yeast wall color. Excellent alcohol tolerance (over 16% vol.) and high glycerol production: 8-8.5 g/l.
Enhances spicy character. Low nitrogen demand.
