Excellent fermenter for white wines with strong varietal character. Rich in beta-glucosidasic activity that allows the revelation of varietal aromas. Recommended on Pinot Grigio, Verdicchio, Prosecco, Moscato and all varieties rich in terpenes. Can ferment at low
temperatures (10°C). Suitable for fermentation of strongly clarified musts. Fructosophilic strain, allowing fermentation to resume following shutdowns.
