EXPERTAN O₂FF is a technological adjuvant of color stabilization and flocculant of protein excesses in wines.
It is a newly developed and modern tannin composed of the molecular fractions obtained by selection and purification of the procyanidin, gallic and ellagic tannins most effective for antioxidant and microbiostatic action. It does not bring any aromatic component to the wine, but enhances its natural organoleptic characteristics.
Expertan O₂FF is designed to achieve the most effective result possible as an antioxidant power (up to 200 times more active than ascorbic acid), exceptionally effective and broad-spectrum antiradical (prevents the free molecules most commonly called radicals from creating the cycle of instability over time), effective bacteriostatic (prevents bacteria from proliferation by inhibiting the bioavailability of microelements by chelation and blocking the essential enzyme function) and at the highest doses also a true antimicrobial action (this last function is to be considered at the highest doses compatible with microbiological testing).
Because of its very high protective power, it is the ideal tannin to reduce the amount of sulfites, maintaining a level of free sulfur dioxide sufficient to ensure the proper progress of fermentation, safeguarding all the natural organoleptic components of the grape variety.
It is also successfully used in winemaking without SO₂, and in those cases where excellent must protection is desired with minimal additions of tannin.
In the case of wines derived from poor grape health (with obvious residual gluconic acid), Expertan O₂FF reacts with residual post-fermentation oxidizing enzymes (tyrosinase and laccase), deactivating them.
