Concentrated enzyme preparation to optimize filtration, clarification and lees maturation operations.
Pure ß-glucanase enzyme that enables rapid yeast autolysis with the liberation of mannoproteins and polysaccharides, hydrolysis of residual pectins and glucans, especially in wines from grapes slightly affected by Botrytis, markedly improving filterability.
Separated lees can also be treated, to be reincorporated into the wine at a later date. ExperZyme Beta is active from 15°C.
