Recommended on white and red musts for its high antioxidant and antiradical power (blocks the oxidizing action of free radicals). High deproteinizing power for removal of residual proteins and inhibition of oxidase enzymes (polyphenol oxidase – laccase). Strong contribution to anthocyanin copigmentation in red musts. Chelating power toward metals.
