Conical truncated vat made of medium-fine-grained French oak wood made by Marsalbotti with with a minimum aging period of 36 months in the open air. Particular attention is paid to the toasting process, which is done with small braziers: the fire softens the wood, lowers the tannic level and bitter notes. With this technique, thermal heating is very slow and excessive formation of roasting aromas and smoke is avoided.
