Malolactic fermentation (or MLF) is a very important stage of winemaking and should not be considered only as the simple process of converting malic acid into lactic acid, operated by malolactic bacteria of the Oenococcus oeni family. In fact, lactic acid bacteria contribute to the aromatic complexity (increased fruity aromas) and taste balance of wines. EXPERTI provides selections of Oenococcus oeni bacteria for the safe performance of malolactic fermentation even in wines with high alcohol content or low pH.
