Fumaric acid is an organic acid naturally present in wine, as it is part of some important metabolic processes of yeast cells.
Its use is intended only on wine, as a stabilizer for microbiological control purposes. Its action is particularly against lactic acid bacteria. Due to its action, it prevents the activation of MLF, allows the arrest of an ongoing MLF, promotes the preservation of malic acidity and contributes to the processing
of wines with a view to reducing SO2 contents.
